This is one of the most celebrated lots coming out of Finca El Paraiso, a legendary farm in Cauca, Colombia known for pushing the boundaries of experimental processing. The M03 protocol is El Paraiso's signature double anaerobic fermentation method — a precisely controlled, science-forward process that coaxes flavors from the cherry that feel almost too good to be true.
At elevation, fully ripe Castillo cherries undergo a two-stage fermentation sequence designed to amplify sweetness and aromatic complexity while preserving the coffee's natural structure. Strict temperature and environmental controls at every stage are what set El Paraiso apart - this is fermentation as craft, not chance.
In the cup, expect the warmth of freshly baked cinnamon rolls right off the bat, followed by a smooth and lingering vanilla sweetness that carries through to a clean, rounded finish.
